Title: Salt-Baked Fish

Clean and gut your fresh water fish. Preheat oven to 425F. Take 2 lbs coarse sea salt and mix it with about 2 tbs of mixed dried herbs and the whites of three eggs. Immediately, spread a layer of salt on the bottom of a deep roasting pan, and lay the fish on top. Cover the fish with the rest of the salt patting it down well to completely surround the fish. Bake in the oven for precisely 15 minutes. Take out and keep warm for 10 minutes. Break open the salt crust, brushing off any that sticks to the fish. Serve the fish. (You CAN serve the salt, if you must, but it won't be very nice - too herby.
